  1. Thanks for the input – liked how you broke out the temps and length to bake. Have an old tired question – we baked flounder (~ 1 pound) and part of the fish was mushy – by the head where as the lower part of the fish was fine. Would appreciate your input into this as to the possible causes.

    1. Hi Phil! Glad that you found it usefull. Main reason seems to be uneven cooking. Flounder itself is pretty flat, so maybe the heat distribution is not optimal. Sometimes i wrap it in aluminum foil (with olive oil, garlic, onions, rosemary – whaterver I feel like) it seems that it helps to cook it more evenly. Alternatively, you can make fillets, that way you make sure that they have similar cooking conditions (as they stay close to each other). Hope it helps, have a great day, Jane.
