1. Heat your grill and spray vegetable oil on the grill surface

2. Rub your pig brisket with kosher salt, ground black pepper, onion powder, brown sugar, and smear a bit of butter over the top of the brisket. You can also use tomato sauce or paste

3. Place the brisket onto the rack and cook at 250°F. You should cook the meat for no less than 1 hour and 30 minutes per pound to make the fat render.

4. Turn the pork brisket onto the other side halfway through the cooking time.

5. Check with a meat thermometer, and when the brisket reaches 195° F. Then remove the meat from heat, let the brisket rest for 10 minutes and serve your smoking hot brisket with barbecue sauce and smoked tomatoes!
